Sweet Pongal

 
Recipe Ingredients:

2 cups rice
1 cup split golden gram
6 cups water
1/4 cup ghee
1 cup crushed molasses sugar
20 almonds
20 cashew nuts
4 cardamom pods

How to Prepare:
Wash split golden gram and rice in several changes of cold water untill the water runs clear. Leave to soak in fresh cold water for 20 min, then drain the water. Cook rice and split golden gram by adding 5 cups of water for 20-30 minutes.
In a vessel add remaining water, cardamom pods and crushed molasses sugar and bring to boil untill molasses sugar completely dissolved in water and appears slightly sticky. Meanwhile in a small saucepan add ghee, when hot add almonds and cashew nuts and cook on a low flame, untill cashew nuts turns light golden in colour, turn off the heat.
Now to the cooked split golden gram rice add almonds and cashew nuts along with ghee  and sticky molasses sugar water, mix well untill well combined, allow to cool and serve.
