100g butter,at room temperature
1/3 cup sugar powder
3 eggs
100g dark chocolate
1 tbsp coffee dissolved in 2 tsp boiling water,cooled
1/2 cup almond meal/ground almonds
1/2 cup plain flour
1/2 cup fresh white breadcrumbs
1/2 tbsp baking powder
1/2 cup double cream
fresh strawberries,to serve
For Chocolate Sauce:
1/2 cup thickened cream
200g dark chocolate,chopped
How to Prepare:
Preheat oven to 180º C or 160º C fan. Grease 6 × 3/4-cup pudding moulds.
Using an electric mixer, beat butter and sugar powder together untill pale and creamy. Add eggs, one at a time, beating well after each addition.Place a heatproof bowl over a saucepan of boiling water and stir untill the dark chocolate melts. Stir thorough melted dark chocolate and coffee.
Add almond meal,flour, breadcrumbs, baking powder and double cream and mix untill just combined.Fill prepared moulds. Place on baking tray and bake for 18-20mins, or untill a skewer inserted comes out clean.
Meanwhile,to make chocolate sauce, heat thickened cream in a small saucepan untill just boiling. Remove from heat. Add chocolate and mix untill chocolate has melted and sauce is smooth.
Invert puddings onto serving plate. pour over chocolate sauce and serve with strawberries.
