Mango Ice Cream

Recipe Ingredients:
1/2 cup mango pulp
1/4 cup milk
1/4 cup sugar
300ml thickened cream
5 egg yolks

How to Prepare:
Combine mango pulp, milk , cream, egg yolks and sugar in a large heatproof bowl, whisk untill smooth. Place the bowl over a saucepan of boiling water and stir untill it coats on the back of a spoon. Leave it to cool.
Place the mixture in the freezer untill almost frozen. Beat with an electric mixer untill smooth and creamy. Re-freeze for 1 hour then re-beat untill smooth. Freeze untill firm. Serve with extra mango pulp.
