500 gm boneless chicken, sliced
4 tbsp crunchy peanut butter
2 tbsp soy sauce
1 tbsp chilli powder
1/2 tbsp salt
For the Chunky Salad:
1/2 onion, peeled and finely sliced
2 small carrots, cut into sticks
1/2 small cabbage, shredded
1 tbsp olive oil
juice of 1 lime
1 tbsp fresh coriander, chopped
1/4 tbsp pepper powder
1/4 tbsp salt
How to Prepare:
Put peanut butter in a small saucepan with the chilli powder, soy sauce and about 200 ml of water. Stir over gentle heat untill combined.
Thread the chicken onto 8 bamboo skewers and brush generously with the satay mixture. Cook under a hot grill for 8-10 minutes, turning occasionally.
Meanwhile, make the salad. put the onion, carrot and cabbage in a bowl and drizzle over the olive oil, lime juice and coriander. Season and mix together well.
Place the satay skewers on the serving plate and serve with chunky salad.
Serving Suggestions;
Serve with warm naan bread and extra satay sauce for dipping.
