Egg Fried Rice


Recipe Ingredients:
2 eggs
1 cup basmati rice
4 tbsp oil
1/4 cup carrot, chopped thin and lengthwise
1/4 cup cabbage, chopped thin/ shredded
1/4 cup green peas
1/4 cup potatoes, chopped into small cubes
2 tbsp soy sauce
1 tbsp venegar
1/4 tbsp chinese salt
2 tbsp pepper powder
salt (according to taste)

How to Prepare:
Wash the rice in several changes of cold water untill the water runs clear. Leave to soak in fresh cold water for 20 min, then drain the water. Cook rice by adding 1 1/2 cup of water for 20-30 minutes.
Whisk the eggs thoroughly and season them by adding a pinch ofpepper powder and salt. Fry the whisked eggs in a pan by constantly stirring. In a large bottomed pan add oil, chopped cabbage,carrot, potatoes and grean peas. Cook for 5 minutes or untill they are done.
Add soy sauce, vinegar, salt , pepper powder and chinese salt, stir well. Finally add rice and scrambled eggs, mix well and cook for 5-10 minutes or untill it is done. Serve hot.

Serving Suggestions:
Any non-veg curries goes well with this.
