Sticky Chicken with Tomato Salsa

Recipe Ingredients:

For Chicken:
500 gm boneless chicken
juice of 1 lime
4 garlic cloves, peeled and crushed
2 tbsp olive oil
2 tbsp honey
1 tbsp tomato sauce
1 tbsp soy sauce

For Salsa:
1 small red onion, chopped
1 cucumber, chopped
8 cherry tomatoes, chopped
juice of 1 lime

How to Prepare:
Cut the chicken pieces into thin strips. In a shallow dish mix juice of 1 lime and crushed garlic. Coat the chicken strips and leave to marinate for at least 20 minutes.
Heat oil in a large saucepan. Remove the chicken from marinade. put in the saucepan and cook over medium heat for 2 minutes on each side. Remove from heat.
Mix honey, tomato sauce and soy sauce in a bowl. Brush over the chicken in the saucepan on both sides. Return saucepan to a low heat and cook for 3 minutes on each side.
Make salsa by mixing onion, juice of 1 lime, chopped cucumber and tomato in a bowl. Serve chicken with salsa.
