Mixed Dosa

Recipe Ingredients:
1 cup rice flour
1 cup plain flour
1 cup corn flour
1 cup gram flour
1 cup semolina
1 cup water
1 cup yogurt
1/2 cup onions, finely chopped
1/2 cup carrots, grated
1/2 cup zucchini, grated
1/2 cup tomato, finely chopped
1/2 cup coriander, finely chopped
1 green chilli, finely chopped
1 tbsp cumin seeds
4 tbsp oil
2 tbsp salt
peanut chutney to serve

How To Prepare:
To make dosa batter, combine rice flour, gram flour, corn flour, plain flour and semolina into a large bowl.Make a well in the center,add salt and water, and yogurt, stir together to make a thick batter.
Now add grated carrots, zucchini, chopped onions, tomatoes , coriander, green chillies and cumin seeds. Mix well untill they combined with the batter.Leave the batter over night for fermentation.
Preheat a heavy-base cast-iron griddle (tawa) or a large heavy-base frying pan over a medium-high heat, add 1/2 tbsp oil.Spread oil all over the pan. Pour 2 or 3 ladelful of dosa batter on the griddle and cook for 2-3 minutes. Using a thin spatula, turn over and cook for 30 seconds.Remove from the pan and keep hot by covering in a piece of foil lined with kitchen paper. Repeat with the remaining dosa batter. Place one or two dosa on serving plate and serve with peanut chutney.
